parmigiano pumpkin soup









This soup is quite charming. So much so, it would be a shame to only bring it out during pumpkin season (it's Hall of Fame). I served it today for a little get-together to celebrate two of my friends who will be welcoming babies next month- Leslie and Chrissy.
Since it was an early brunch I wasn't quite sure what to serve. 

parmigiano pumpkin soup (American Lifestyle Magazine, October 2009)
3 slices bacon, cut into thin strips
1 large onion, cut into 1/8" dice
3 cloves garlic, minced
1 can (about 28 ounces) 100% pure pumpkin
1 quart chicken broth
1/8 teaspoon nutmeg
1 teaspoon kosher salt
1/4 teaspoon ground white pepper
1/2 cup cream (at least 10% fat)
1/2 cup freshly grated Parmigiano-Reggiano cheese
2 tablespoons chopped fresh Italian parsley (flat leaf)

Heat a large deep skillet over medium heat. Add the bacon and saute until crisp and frizzled. Add the onion and saute until tender. Add the garlic and cook for a few seconds, until aromatic. Stir in the pumpkin, broth, nutmeg, salt and pepper and bring to a boil. Transfer to a 5- to 6-quart slow cooker, cover, and cook for 3 to 4 hours on high, or 6 to 8 hours on low. Stir in the cream and Parmesan, and heat through, about 5 minutes. Stir in the parsley and serve.

  1. You're right - it is a hall-of-famer for sure. And you're also right about eating well when we're together. So much so it's a bit intimidating to bring something to share sometimes. Loved getting together....thanks again.

  2. You always make something DELICIOUS and always on a beautiful platter. My neighbor served your spinach chicken salad at her daughter's birthday party and also took it to her husband's work party at Christmas. When the bowl was empty they held it up for everyone to see and asked who brought so they could get the recipe. I'd have been so proud! I'm still waiting for my "moment". I'd love the recipe for the chicken salad you recently made as well as the brown sugar brie and the chicken wraps you made for a frozen meal swap a while back.
    I always love getting together!
