cinnamon rolls with chocolate chips









Wait! Before you think this is just another cinnamon roll recipe you must know that these are filled with chocolate chips in addition to the standard sugar and cinnamon. When I was in college in Hawaii my bishop invited the entire student ward to his home (it was the shape of an octagon!) to hang out, ride their horse, jump on their trampoline and enjoy delicious homemade cinnamon rolls. Keep in mind that we were college kids and what college kids tend to eat. These tasted like a little bit of heaven in heaven and my bishop's wife was a saint to make so many for so many hungry students.

Mix and let sit for 10 minutes.
3 1/2 cups warm water
3/4 cup sugar
6 tablespoons yeast
Add to the mixture in order given:
1 tablespoon salt
3 already beaten eggs
5 cups flour
1 cup oil
5 1/2 cups more flour

Mix and knead for 5 minutes. Divide in half, roll out one of the halves using flour into a rectangular shape. Spread on softened butter or margarine, being somewhat generous. Sprinkle on cinnamon as desired. Add 1 cup sugar (half brown sugar and half white sugar) over entire surface. Use 1/4 bag chocolate chips and spread out evenly. Nuts are optional. Roll up tightly, making one long roll and pinch dough together to close off top portion. Cut with sawing motion into 24 pieces, about 1 1/2" wide. Place on baking sheet. After 10-15 minutes, place into preheated oven to bake- 375 degrees for 7 to 15 minutes until lightly browned. Now prepare the other half.

Icing
8 ounces cream cheese, softened
1/2 cup butter or margarine
3 1/2 cups powdered sugar
1 tablespoon milk
3 drops vanilla flavoring

Blend ingredients until smooth.
