lemon blueberry bread
This bread is irresistible and is usually consumed within minutes at our house. When I saw a bag of fresh lemons at the store (a whole bag for 2.99 instead of .99 each!) I thought of Mandy and knew I needed to make this bread. I also think of her whenever I see a huge pork loin because she brought me smoked pork for my birthday one year. Crab stuffed pork another year. When I think of food, I think of my friends. I wonder if my friends would be able to guess which food item or dish they are to me.
lemon blueberry bread (my friend Mandy in CO, see her at gourmet mom-on-the-go)
1/3 cup melted butter
1 cup white sugar
3 tablespoons lemon juice
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup milk
2 tablespoons grated lemon zest
1 cup fresh or frozen blueberries
glaze
2 tablespoons lemon juice
1/4 cup white sugar
Preheat oven to 350 degrees. Prepare a standard sized loaf pan. In a mixing bowl, beat together butter, sugar, juice and eggs. Combine flour, baking powder and salt; stir into egg mixture alternately with milk. Fold in peel and blueberries. Pour batter into prepared pan. Bake in preheated oven for 60 to 70 minutes, until a toothpick inserted into center of loaf comes out clean. Cool bread in pan for 10 minutes. Drizzle with glaze.
