mom's banana bread
This afternoon my friend Melissa and her daughter came over to hang out for a bit. She was so sweet and brought me some banana muffins made from my mom's recipe. They were delicious. Thank you Melissa!
banana bread (my mom)
1 3/4 cup sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup shortening or butter
2/3 cup sugar
2 eggs, beaten
1 cup mashed banana
Sift together flour, baking powder and salt. Beat shortening until creamy. Add sugar gradually and continue beating until light and fluffy. Add eggs and beat well. Add flour mixture. Alternate with bananas, a small amount at a time, beating after each addition until smooth. Turn into a well-greased 8 1/2 x 4 1/2 x 2 pan and bake at 350 degrees for about an hour and 10 minutes.
