lemon icebox pie









This pie is delicious. The lemon is very subtle and it tastes just like cheesecake. Mmmm!
Our family has reason to celebrate- we accepted an offer on our house last night! What a tremendous blessing for us. 

lemon icebox pie (allrecipes.com)
1 (9-inch) prepared graham cracker crust
2 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
2 lemons, juiced
1 teaspoon lemon zest

In a medium mixing bowl, beat cream cheese until fluffy. Add condensed milk, lemon juice and lemon rind. Mix until smooth. Pour mixture into crust. Refrigerate at least 2 hours before serving. Garnish with whipped cream and mint leaves if desired.

  4. I saw this recipe when you first posted it, and glad I searched your desserts again. Greg's parents are coming on sunday, and his dad is a big dessert fan, so I am going to make blueberry crisp AND this lemon icebox pie.

  5. This is fabulous and super easy! Only problem is that our company last night only indulged in one piece (I served crisp too), so now I have almost a whole leftover pie, and I happen to love cheesecake! It's going to be a big problem trying not to eat the whole thing myself!
