roxanne's saturday chicken
I enjoyed this dish for the first time at my friend Erin R's house in St. Louis. It was soooo good that I asked for the recipe. I was surprised the recipe called for a can of Campbell's soup! I made this for my meal swap tonight. Actually, two of us enjoyed this chicken and two enjoyed (I hope) Asian Chicken Salad. We vote on our favorites and after everyone voted I told them about the salad and two of the swappers changed their votes. We had fresh bread on the side and banana bars with cinnamon cream cheese frosting for dessert.
roxanne's saturday chicken (my friend Erin R.)
6 pieces chicken
8 ounces whipping cream
1 can Campbell's golden mushroom soup
fresh mushrooms
garlic to taste
paprika to taste
salt to taste
chopped parsley
Place chicken in flat casserole dish. Sprinkle with salt, garlic and paprika. Mix soup and whipping cream; pour over chicken. Sprinkle with parsley. Bake, uncovered, for 90 minutes at 350 F. Serve over pasta or rice.
What I have to say- the first time I made this it wasn't as good as Erin's. I asked her about it and she said to be very generous with the spices.
