grilled basil beef
This has been a favorite ever since I took a meats class at Ricks College many years ago. Although I can't remember the source of the recipe, most of our meats recipes in that class came from the California Culinary Academy. This recipe is so good even if it isn't true, you'll believe it (the original recipe is for basil beef pockets but we also eat it just like this served with rice or quinoa or pasta or potato salad- whatever!).
grilled basil beef (meats class at Ricks College)
1 1/4 pounds beef top round steak
1/4 cup soy sauce
2 tablespoons red wine vinegar
2 teaspoons dried basil leaves
2 cloves garlic, minced
Combine soy sauce, wine vinegar, dried basil and garlic. Place beef and marinade in plastic bag, turning to coat. Close bag securely and marinate 6-8 hours (sometimes I marinate overnight). Grill and enjoy! Tastes wonderful accompanied by citrus.
