double chocolate mint brownies









Tonight was my night to cook for the meal swap. It was last minute to coordinate with house showings. I made French Dip which I've already posted, roasted veggies (see previous post) and double chocolate mint brownies, only I created a simplified version which is below. They're super delicious. For the original Hershey's version, you can go to Recipe Picnic. Ordinarily I think homemade is best but you really can't go wrong with the simplified version, especially if your life feels a bit more hectic than usual.

brownie:
Bake a box of your favorite brownie mix according to the directions on the box in a 9x13 pan. Cool completely and then spread with mint layer. Then chill again before putting the chocolate layer on top. Cover and chill again before serving.

mint layer:
Add 1/2 teaspoon mint extract and a few drops of green food coloring to any vanilla flavored tub of icing.

chocolate layer:
6 tablespoons butter
1 cup semi-sweet chocolate chips

Microwave for 1 to 1/2 minutes. Stir until smooth.
