crusty chicken with garlic, lemon and herbs









For our dinner swap tonight I made Crusty Chicken with Garlic, Lemon and Herbs.  The first time I made it was during my meats class.  Delcious!

crusty chicken with garlic, lemon and herbs (exact source unknown, Ricks College)
6 boneless, skinless chicken breasts
1/2 cup butter
3 cloves garlic put through a press
3 tablespoons lemon juice
1 tablespoon chopped chives
1 tablespoon chopped parsley
1/2 teaspoon thyme flakes
1 teaspoon Dijon mustard

Place chicken pieces in one layer in a 12x16-inch pan. In a saucepan, heat together the remaining ingredients until butter is melted. Baste chicken generously with butter mixture. Bake chicken in a 350 oven for 30 minutes, basting frequently. Sprinkle seasoned crumbs (recipe below) over the chicken and continue baking for 45 minutes or until chicken is tender.

seasoned crumbs
1/2 cup Ritz cracker crumbs
1/2 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon thyme flakes
1/4 cup melted butter
Combine all ingredients.
