confetti meatloaf









My neighbor friend Melissa made this moist, flavorful and undoubtedly delicious meatloaf with greek potato salad for our meal swap tonight. I will be making it again and again.

confetti meatloaf (my friend Melissa)
1 pound ground chicken
2 eggs
1/2 cup salsa
1/4 cup red bell pepper, chopped
1/4 cup yellow bell pepper, chopped
1/2 cup onion, chopped
lemon pepper

Preheat oven to 350 degrees. Mix all ingredients well and place in a greased loaf pan. Bake for approximately 1 hour.

Serving suggestion: Pour your favorite salsa over the top.

  1. There's no way you could have hated it (still do) more than me! Unfortunately for him, my husband loves it, but I'm only willing to make it about once every 2 years :)
