This marinated cheese is one of my favorite appetizers served with Triscuits, of course.
marinated cheese
1/2 cup olive oil
1/2 cup white wine vinegar
3 tablespoons chopped fresh parsley
3 tablespoons minced green onions
1 teaspoon sugar
3/4 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
3 cloves garlic, minced
1 (2 ounce) jar diced pimiento, drained
1 (8 ounce) block sharp cheddar cheese
1 (8 ounce) block any white cheese
Chop green onions and parsley until fine.
Combine oil, vinegar, sugar, basil, salt and pepper. Add garlic, onions, parsley and pimiento and combine well. Set marinade aside.
Slice cheese into 1/4-inch slices. Arrange cheese slices alternately in shallow dish. Pour marinade over cheese slices. Cover and marinate 8 hours.
