homemade oatmeal cream pies
When I saw this recipe I knew I had to make them and right away. I had some marshmallow creme in my cupboard and just the right amount of powdered sugar. I'm in clean-out-the-pantry-before-we-move mode. I've never made a cookie with filling before so I was highly motivated in that regard as well. These are positively delicious. My kids went crazy over the filling. This was a fun cookie to make!
homemade oatmeal cream pies (blog: An A For Effort)
1 cup flour
1 teaspoon cocoa powder
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup brown sugar
1/2 cup butter
1 egg
1 teaspoon vanilla
1 cup old fashioned oats
Preheat the oven to 350 F. Line two baking sheets with parchment paper (I used waxed). The cookies will need to cool on the baking sheet and you don't want them to stick!
Combine all the dry ingredients except the brown sugar and oats and set aside.
In a mixer, cream the brown sugar, melted butter, egg and vanilla.
Add the dry ingredients and mix until combined. Stir in the oats.
Using a tablespoon size scoop, place evenly size dough balls on parchment paper. Allow room for cookies to spread.
Bake for 7-9 minutes. Remove from the oven and allow to cool on the baking sheet.
What I have to say- I need a tablespoon size scoop! My cookies were jumbo on my first baking sheet so I used an actual tablespoon for the next batch and they came out much better. In other words, follow the instructions!!
Way better than the oatmeal pies you can buy at the store! I did manage to share a piece of my cookie with my husband, but the kids didn't get so lucky. :) -Laura
