confetti veggie pizza
Watching General Conference this weekend is going to be like watching the Superbowl for our family. We're going to kick back at home and eat our way through the sessions.
This pizza was a huge hit. My kids told me if I want them to eat more veggies this is the way to do it.
confetti veggie pizza (adapted from Friend Magazine, March 2011)
2 cans refrigerated crescent rolls
1 (8 ounce) package light cream cheese, softened
1/4 cup light mayo
2 tablespoons packet Knorr's vegetable soup mix
red, yellow and green peppers, diced
carrots, cut into matchsticks
Preheat oven to 375F.
Open the crescent rolls. Press the dough into a round pizza pan or a cookie sheet. Bake for 10-12 minutes. Put the cream cheese and mayo in a mixing bowl. Sprinkle on the dressing mix. Mix until the mixture is smooth and creamy. Spread the cream cheese mixture on the cooled pizza crust and sprinkle on the veggie confetti. Enjoy!

ReplyDeleteWe've been snacking on a platter of brie cheese, stilton cheese, pomegranite&cherry fruit spread, 2 types of salami, kalamata olives, grapes and drinking white birch beer. For dinner we're having authentic Philly cheesesteaks, artichokes with lemon/mayo dip, berry smoothies and a zucchini cake with cream cheese frosting.
You're making me hungry and I shouldn't be hungry! It all sounds so good! I want to see that authentic cheese steak recipe. I was going to make my recipe sometime soon but it's not authentic, I don't think.
ReplyDeleteEh, the cheese steak recipe was a complete bust. My meat wasn't sliced thin enough. But everything else was delicious. Today we're having leftover cheese/salamies, leftover zucchini cake (which was SO good), zeppoles (an Italian sugar doughnut made from pizza dough), berry smoothies, cheese burgers made with a Williams&Sonoma starter, glute-free chocolate mousse for Ruby, Izze peach drinks...and...something else that's not coming to my brain right now but I'm sure my kids won't let me forget it when it comes time to eat.
