mini egg bakes










I love General Conference weekend for many reasons but one is that we eat really well.  This morning we had our traditional citrus cream cheese pull apart rolls. A last minute idea was to throw these mini egg bakes together.  They were a huge hit and it was nice to have something savory with our sweet rolls.

mini egg bakes (pass the green peas, please)
24 slices smoked deli ham (we used Hormel Natural Choice in the brown box)
1 cup Egg Beaters Southwestern Style (or use real eggs scrambled)
2 green onions, sliced
1/2 cup mozarella cheese, shredded
cooking spray

Preheat oven to 375 degrees. Spray 12 muffin cups with non stick cooking spray.  Line each muffin cup with two rounds of ham.  In a bowl combine egg beaters, green onions and cheese.  Spoon egg mixture into each ham lined muffin cup.  Bake at 375 for 20 minutes.  If desired, top with salsa.
