This is a mildly sweet, flavorful rice that can be made with any kind of rice. Last night I used brown basmati rice (the quick cook from Trader Joes) and it was my favorite way to make it. Sometimes I add a little diced onion with the carrots to it to make it extra special. A great way to sneak in a veggie or two!
your choice of uncooked rice
few carrots, grated
Decide how much rice you want to make. You will use the directions on the package of the rice to make this recipe.
In a pot with a tight fitting lid, pour a ring of oil into the pot over medium high heat. Add the carrots and saute for a minute. Add the amount of rice you desire and stir with the carrots. Instead of adding the amount of water that directions calls for, add that amount of chicken broth and some black pepper. Cook as directed. When it is done, fluff with a fork.
